XO is where a cognac house shows its library. This one is assembled from a large number of mature eaux-de-vie, all drawn from Grande and Petite Champagne, and the result is less about any single note than about seamlessness: the joins between components simply are not detectable. A bottle for marking an occasion rather than filling a shelf.
Dense and velvety, with candied orange, fig, hazelnut and plum over cinnamon, dark chocolate and a very long finish. Serve it neat at room temperature in a tulip glass and leave the ice in the freezer. Pair it with a square of dark chocolate, or with nothing at all, and take your time.
