Roy Estate farms a steep, rocky parcel in the hills above the Napa Valley floor, the kind of site that yields small berries, low tonnage and deeply concentrated fruit. This is a boutique Cabernet in the genuine sense: production is limited, the vineyard is the whole story, and the wine is built to reward a decade in a cellar as readily as a dinner worth dressing for.
The profile is dense and structured, with cassis, black cherry, dark chocolate and a graphite edge framed by firm, fine-grained tannins. Decant it for an hour and serve it in a large glass. Dry-aged ribeye, rack of lamb or an aged hard cheese will meet it on equal footing. If you buy two, cellar one.
