Glera grapes grown in the hills northeast of Venice make Prosecco, and the good ones taste of the place: bright, floral, uncomplicated in the best possible way. Ruffino has been a name in Italian wine since 1877, and its Prosecco DOC is the sort of bottle worth keeping permanently cold, because the occasions for it tend to arrive without warning.
Fine, persistent bubbles carry green apple, white peach and acacia blossom, finishing crisp with only a trace of sweetness in the extra dry style. Serve it cold in a tulip glass rather than a narrow flute. Prosciutto, fried calamari, salty snacks and brunch all suit it, and it is the correct base for a Bellini or an Aperol spritz.
