Product Description
Casa San Matias has been distilling in Jalisco since 1886, which makes it one of the oldest houses still working, and it has spent recent decades under the direction of one of the industry's few women at the helm. The extra anejo is its long game: agave spirit left in oak well past the three-year threshold until it begins behaving like fine brandy.
The result is dark and layered, with roasted agave, dried fig, dark chocolate, leather and a long, sweet-spiced finish. Nothing here needs mixing. Pour a small measure neat, at room temperature, in a proper glass, and treat it the way you would treat an aged Cognac at the end of a serious meal.
