Product Description
San Silvestro has farmed in the Langhe hills of Piedmont for four generations, working with the native grapes that made the region's reputation long before the rest of the world caught on. Their reds share a family resemblance: firm, savoury, built around acidity and structure rather than sweetness, and made to be drunk with food rather than admired in isolation.
Expect a classically Piedmontese profile of sour cherry, dried rose, tar and dried herb, with grippy tannins and a long, dry finish. Decant it for an hour and serve at cool room temperature in a large glass. Braised beef, mushroom risotto, game, or a plate of hard mountain cheese will each bring out its best.
