In 1961 Santa Margherita tried something nobody had bothered with: vinifying Pinot Grigio off the skins to make a pale, dry, crisp white rather than the coppery and often flabby wine the grape usually produced. That single decision created the category and made this the most recognised Italian white in America. Sixty-five years later it remains the reference point.
The wine is precise and bone-dry, with golden apple, lemon, a touch of white peach and a clean mineral finish. Serve it thoroughly chilled. It flatters seafood, risotto, prosciutto, light pasta and salads, and it is one of the safest bottles in the store to carry to a dinner party. Drink it young.
