Ripe mango set against the honeysuckle sweetness of Moscato sounds like an experiment and works on the first sip. Santero, a sparkling wine house in Piedmont, has built a following on exactly this sort of bottling: Italian sparkling wine with the fruit turned up and the seriousness turned down, priced so that trying it costs nothing much.
The mousse is soft, the palate is full of tropical mango and ripe peach, and the sweetness stays bright rather than heavy thanks to a lift of citrus acidity. Serve it very cold, in a flute or over ice. Good with fruit desserts and spicy food, and a cheerful pour for a brunch or a celebration.
