Product Description
Sea Smoke farms a single estate on the south-facing slopes of the Sta. Rita Hills, where Pacific fog stretches the growing season and Pinot Noir ripens slowly. Southing is the cuvee drawn from the warmer blocks of that vineyard, and between the biodynamic farming and the small production, these bottles are genuinely difficult to find. Collectors buy them on release for a reason.
Dark cherry, black raspberry and cola sit over savory spice, with fine tannins, real acidity and a long, mineral-edged close. Decant it briefly and serve a touch below room temperature with duck, salmon or roast lamb. It will reward another decade of patience.
