Washington State quietly makes some of the best-value reds in the country, and the Wahluke Slope in the Columbia Valley is one of the reasons: hot days, cold nights and long hours of sun that ripen fruit without stripping its acidity. Seven Falls draws on that ground for a blend that drinks well above its price.
The 2016 is dark and generous, with blackberry, black cherry and plum layered over mocha and sweet oak spice, its tannins smoothed by a few years in bottle. Serve it at cool room temperature with steak, braised short ribs, burgers or a hard aged cheese. No decanting necessary.
