Aged tequila is where a distillery's character either survives or disappears, and at Siete Leguas it survives. The family has made tequila in the Jalisco highlands since the early 1950s using traditional crushing and fermentation, and the anejo carries that identity through its time in oak instead of trading it away for vanilla.
Expect roasted agave, dried fruit and baking spice over caramel and toasted wood, with a finish that runs dry and long. Drink it neat at room temperature and take it slowly; a wide-mouthed glass helps. Best after dinner, or any time a whiskey drinker needs converting.
