Unaged tequila from a traditional distillery tells you everything about how it was made, and there is nowhere to hide. Siete Leguas still cooks its agave in brick ovens, crushes part of it with a stone tahona and ferments with the fibers in place, and the silver carries all of that through to the glass unaltered.
Assertive and savory rather than sweet, with cooked agave, cracked pepper, lime peel, damp earth and a clean mineral finish. Sip it neat to appreciate it properly, or pour it into a margarita built simply with fresh lime. It is one of the few silvers that improves a drink rather than merely filling it.
