Siete Leguas has distilled in Atotonilco el Alto since 1952, still crushing part of its agave with a stone tahona and fermenting with the fibers in place, and for decades it supplied the spirit behind one of the most famous tequila labels in the world. The anejo is the house at its most complete, aged in American oak until the agave and the wood are in agreement.
Roasted agave, cooked pear and sweet spice sit over vanilla, toasted oak and a whisper of cocoa, finishing long and dry rather than sugary. Serve it neat in a copita at room temperature and give it a little air. This is a sipping tequila that stands comparison with good whiskey.
