St-Remy has been blending French brandy since 1886, and Signature is the house entry point: eaux-de-vie distilled from French wine, matured in oak and assembled for approachability rather than ceremony. For anyone who has only met brandy in a snifter at the end of a long meal, it makes a useful and affordable reintroduction.
Soft and rounded, with baked apple, vanilla and a light caramel sweetness laid over a gentle oak frame. Pleasant enough neat over a single large cube, though it truly earns its keep mixed: brandy and ginger ale, a Sidecar, or a measure stirred into hot cider.
