Taylor built its reputation on fortified wine, and the sherry style in this bottle is the more restrained member of the family, less sweet and more savory than the cream bottling. It is made in New York rather than Andalusia, so think of it as an American reading of a Spanish idea: nutty, gently oxidative, and considerably kinder on the wallet.
The palate runs to toasted almond, dried apricot and light caramel, finishing clean rather than cloying. Serve it chilled as an aperitif in a small glass, or keep it beside the stove for soups, pan sauces and anything that wants a little extra depth.
