Anejo is the patient end of the tequila spectrum. The category requires at least a full year resting in oak, and that time does to agave roughly what it does to whiskey: softens the spirit, deepens the color, and layers in sweetness from the wood. The result belongs in a glass on its own rather than in a shaker.
Expect amber color and a rounded palate of cooked agave, vanilla, dried fruit and toasted spice, with a long and warming finish. Serve it neat at room temperature, in a copita or a short tumbler, and drink it slowly. One for anyone who enjoys sipping aged rum or bourbon.
