Agave is slow-roasted in brick ovens in the Jalisco highlands and distilled in small copper pots, then bottled without barrel aging so nothing stands between you and the plant. Fresh and expressive, with cooked agave, lime peel, white pepper and a faint floral note through a crisp finish. It makes an unusually good margarita and an even better paloma. Chill it lightly and sip it neat if you would rather taste it undisguised.
