Thomas H. Handy is the New Orleans bar owner credited with swapping cognac for rye in the Sazerac, and the whiskey carrying his name is the rye slot in Kentucky's most famous annual antique collection. Released once a year in tiny quantities, it goes out uncut and unfiltered at barrel strength and disappears fastest of all in cocktail circles.
At full proof it is intense and unmistakably rye: black pepper, clove, mint and anise over dark caramel, cherry and toasted oak, with a hot, long, drying finish. A few drops of water open it considerably. Sip it neat with respect, or build the best Sazerac of your life with it.
