Product Description
Wine-cask finishing works best when the wine is soft, and merlot is about as soft as red wine gets. That makes it a sympathetic partner for Kentucky bourbon, lending fruit and color without the tannic grip a bigger red would impose. Thomas S. Moore takes fully aged straight bourbon and gives it a second maturation in merlot casks.
The bourbon's caramel and baking spice pick up black cherry, plum, cocoa and a gentle dryness at the edges. It is richer and jammier than the base whiskey, with a long, faintly tannic finish. Pour it neat, or over one large cube, and serve it after a steak or with aged cheese.
