Product Description
Ripasso is one of winemaking's better ideas: finished Valpolicella is re-passed over the skins left behind from Amarone fermentation, picking up weight, alcohol and depth without becoming Amarone itself. It is sometimes called baby Amarone, and in a well-made example like this the nickname reads as a compliment rather than a shortcut.
Fuller and darker than a straight Valpolicella — black cherry in kirsch, dried fig, cocoa and sweet spice over firm, fine-grained tannins. Decant briefly and serve just below room temperature with osso buco, short ribs, aged cheese or a winter stew.
