Every good cocktail book assumes a bottle of this is already in the house, and most home bars do not have one. Fixing that costs very little and improves a surprising number of drinks. This is the familiar, dependable sweet vermouth — rich enough to matter in a Manhattan, mild enough not to run away with it.
Look for cola-like spice, dried fig, orange zest and a soft bitter finish underneath the sweetness. Best cold: stir it into whiskey drinks, pour it over ice with soda and a citrus wedge as an easy low-strength aperitivo, or save it for the Negroni you will inevitably want. Store it in the fridge.
