Retsina is Greek wine at its most unapologetic: a white sealed and flavored with Aleppo pine resin, a practice that reaches back to the age of the amphora. Nothing else on a shelf tastes remotely like it. Tsantali makes a clean, modern version that presents the style as a deliberate choice rather than a relic.
The nose is pine sap and lemon pith, the palate bone dry, faintly briny and startlingly refreshing. Serve it thoroughly cold in a tumbler, the way it is poured in Athens, with grilled octopus, fried calamari, feta, olives, dolmades or anything salty off a grill.
