Junmai ginjo is the grade where sake starts to get expressive. The rice is polished further than in a standard junmai, which strips away heaviness and lets the aromatics come forward. TY KU Black is the premium tier of the range, brewed in Japan and bottled in the label's unmistakable dark glass.
Look for pear, honeydew and white flowers, a silky texture and a finish that is dry without turning austere. Serve it cold in a wine glass so those aromatics have room to move. Sashimi, oysters, ceviche, soft cheese and lightly dressed greens all flatter it. For drinkers ready to give sake the seriousness they give white wine.
