Madame Clicquot took over the house in 1805 at twenty-seven, widowed and running a business the law barely allowed her to own, and went on to invent the riddling table that made clear Champagne possible. The brut carrying her name is built on a Pinot Noir-dominant blend with a large proportion of reserve wines, which is why it tastes consistent year after year.
The bubbles are fine and persistent, the profile driven by white fruit, brioche and toasted almond over a firm, dry finish. Serve it properly chilled in a white wine glass rather than a flute, on its own as an aperitif, or with oysters, fried chicken, or anything salty and crisp.
