Paso Robles built its reputation on Cabernet, and Vina Robles has spent three decades learning exactly what the region's limestone soils and wide day-to-night temperature swings can do with the grape. The estate keeps its farming close and its winemaking unfussy, which is why these bottles taste like the place rather than like a formula.
Dark cherry and cassis arrive first, followed by cocoa, cedar and a pleasant dusty tannin that firms up the finish. It is generous without being jammy. Decant it half an hour and pour it with ribeye, short ribs, mushroom risotto or a wedge of aged cheddar.
