Walter Hansel farms in Sonoma's Russian River Valley, where fog rolling in off the Pacific keeps Pinot Noir honest. The family sells much of what it grows to other wineries and bottles only the best of it under its own label, block by block, in small quantities. Serious Pinot drinkers have known about these wines for years.
Red cherry, cranberry and rhubarb over an earthy, savory base, with fine tannins, bright acidity and a finish that stretches. Serve it around sixty degrees and open it half an hour ahead. Salmon, duck breast, roast chicken with mushrooms or a good piece of brie all suit it well.
