Yellow Tail offers the everyday version: plush, dark-fruited and softened for immediate drinking, without the tannic grip that makes bigger examples demand a few years of patience. Look for blackberry, dark plum and a lick of black pepper and vanilla, all carried on a round, warming body. It needs no decanting and no occasion. Barbecue, ribs, lamb, sausages and a pizza with too much on it are all fair game. Serve slightly below room temperature so the fruit stays fresh rather than heavy.
